Mamaw Chicken and Rice Casserole
I grew up with this chicken and rice casserole recipe. My Grandmother got it from a lady from church at a potluck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)
Salsa Chicken Rice Casserole
Layers of rice, chicken breast, a creamy soup and salsa mixture and two kinds of cheese add up to a simply yummy salsa casserole! This recipe is a family favorite because it's delicious and easily made with ingredients found in the pantry.
Red Rice and Sausage
Red rice and sausage is a Charleston favorite. I like to use turkey sausage, another good alternative is Italian sausage.
Country Captain Chicken with Rice
This is an easy dish to experiment with Indian cooking, assuming it is not a family tradition already. I learned it from my sous chef Robbie J. at Keswick Hall.
Hearty Hoppin John
I make Hoppin' John every New Year's day. It's supposed to bring you luck, and so far, my life's been pretty good! It's also good anytime you need a hearty, homey meal.
Gullah Red Rice
Gullah red rice is one of Charleston, South Carolina's best dishes. Being from the sea islands of Charleston, this is a go-to dish passed down!
Kent's Chicken Bog For a Crowd
If you're looking for a crowd-pleasing chicken and rice dinner that can feed an army, your search ends here. Chicken bog, which shares a history with pilau, is a simple South Carolina staple that has stood the test of time. This big-batch chicken bog recipe comes from Kent Huggins, a Carolina native who has perfected his family's technique over decades. What sets Kent's version apart? His chicken bog (which uses a strict 3:1 stock-to-rice ratio) is cooked in the oven. This eliminates the temptation to stir the rice and ensures a perfectly boggy texture.
Charleston Shrimp n Gravy
This shrimp 'n' gravy, an original Charleston favorite, is usually served as 'shrimp n grits.' Serve over fresh hot grits, rice, or biscuits.
Garlic Chicken Fragrant Rice On a Budget
This is an extremely simple and quick recipe which produces marvelous results! Garlic is mashed and placed into the rice cooker with some chicken for flavour. The result is the extremely fragrant garlic rice to die for! Delicious by itself, even better with some chicken!
Golden Rice Cakes with Sweet Potato-Ginger Sauce
These rice cakes are absolutely delicious and have crunchy crust with light, moist interiors. The ginger, coconut milk, and sweet potatoes make the sauce absolutely yummy. You can replace the orange juice with water if you like.
