Sea Bass with Citrus Salsa
Dinner-party elegance in a 20-minute dish? It's possible, when you start with great ingredients that require little embellishment. Here, we use sea bass, a tender, mild-flavored fish with a lovely buttery quality. There are several sustainable options to choose from (Atlantic black sea bass, for one), so ask your fishmonger to ensure you're making a responsible choice. You can also use cod, sablefish (also called black cod), striped bass, or barramundi with great results. Any of these white-fleshed fish will take well to the bright flavors of the simple grapefruit-and-orange topping.
Sheet Pan Shrimp Pineapple & Peppers with Rice
This incredibly easy seafood dinner uses fresh pineapple and a teriyaki-style sauce a sweet-and-tangy flavor profile. The pineapple also concentrates as it bakes and helps keep the rice mixture from becoming too dry. Rather than spreading the rice to the far edges of the sheet pan, keep it closer to the center and layer the vegetables and shrimp on top. This way their juices seep right into the rice, and the teriyaki drizzle coats every bite.
Seafood Salad
This seafood salad features poached shrimp, scallops and squid bathed in a punchy vinaigrette with thinly sliced onion and fennel for bite and crunch. For super-thin veggies, use a mandoline for slicing.
Classic Crab Cakes
The sweet, clean flavor of crab shines in this recipe for Classic Crab Cakes. This light but filling seafood staple mainly relies on ingredients that are already in your fridge and pantry and comes together in less than half an hour. We've also included a salmon variation if you're not in the mood for crab.
Beer Battered Fish Tacos with Tomato & Avocado Salsa for Two
Lovers of fried fish get the taste without all the calories, and the salsa adds a fresh, clean note. To complete the Baja theme, serve with black beans, some diced mango and a bit of light sour cream.
Fish Taco Bowls with Green Cabbage Slaw
Fresh salsa verde, green cabbage and avocado all contribute to the vibrant green color of this light and bright fish taco bowl. We love the mild flavor and firm, meaty texture of halibut, but any firm white fish (like mahi mahi or tilapia) would work well in its place. We garnish this flavorful taco bowl with cilantro, but if you want to take it a step further, try toppings like sprouts or watermelon radishes for even more bright green color.
Curried Fish
Though curried goat, chicken and shrimp are more popular in Jamaica than fish, food journalist Jacqui Sinclair's curry with mild mahi-mahi is a delicious and light alternative. Serve over rice.
Fish Stew with Olives Capers & Potatoes
The olive, caper and tomato-based sauce in this healthy fish stew recipe gives this very traditional Italian dish tons of flavor. Serve with crusty bread for dipping.
Blackened Fish Tacos
These blackened fish tacos pack a punch. The blackened fish gets plenty of flavor from herbs and spices, the salsa adds some zing and the cabbage provides a nice raw crunch.
Tambran Tamarind Fish
The Caribbean's tropical climate is ideal for growing tamarind, or tambran as it is colloquially called in Trinidad. Often thought of as a native Indian fruit, tamarind is actually indigenous to Africa but was likely brought to India via trade routes millennia ago. Once transplanted to the subcontinent, tamarind quickly became a staple of Indian cooking and is used in sauces, drinks, desserts and stews. It came to South America and the Caribbean with European colonizers in the 16th century, so was already on the scene when indentured East Indians arrived in the West Indies.
Pan Seared Fish with Basil Oil & Cherry Tomato Vinaigrette
If you have a lot of basil, double the oil for this pan-seared fish recipe. It doesn't take any more time to make and it's delicious whisked into dressings, drizzled over grilled vegetables and used to make garlic bread. The same technique works well for lots of other herbs, too—think: tarragon, parsley, chives.
Jamaican Escovitch Fish
This is a traditional way that fish is served in Jamaica that is similar to the escabeches of the Spanish-speaking islands. It is traditionally served with bammy (also spelled bammie), a cassava flatbread, but I like to eat it with rice to better soak up the marinade. This recipe makes four cups of pickled vegetables: You can use it all or reserve some and use the leftovers as a complement to other fish or meat dishes or in sandwiches.
